Guide

  • Preheat oven to 200.
  • Beat the eggs. This should be done vigorously to make the muffins fluffy.
  • Add oil, lemon juice, vegetable milk and sugar and continue mixing. Then add the spices and extracts of your choice (vanilla, cinnamon, etc.).
  • In a separate bowl, mix the oat and rice flour.
  • Gradually add the flour mixture to another bowl and continue mixing.
  • Finally, add the yeast and stir for another minute. The dough is now ready.
  • Put the dough in the refrigerator for half an hour. This helps the muffins rise and stay soft.
  • Fill 2/3 of each muffin mold. You can sprinkle a little sugar on top to give crispness.
  • Put the oatmeal muffins in the oven and bake for 15-20 minutes at 180.
  • Make sure the muffins are cooked on the inside before you turn off the oven and let them cool down.

Although we used cane sugar in this recipe, which is much healthier than white sugar, these oatmeal muffins can also be sweetened with honey, molasses, agave or maple syrup.

The natural sweetener stevia can also be used, but it should be clean, transparent and as tasteless as possible.
