1. Apple-date-oatmeal cookies

In this recipe, sugar is replaced with dates and apples, which bring sweetness to oatmeal cookies.

Ingredients

  • 140 g oatmeal
  • 140 g of whole wheat flour
  • 10 pitted dates
  • 1 large, ripe apple grated
  • A pinch of dry yeast
  • 80 ml olive or coconut oil
  • Almond chips for decoration

Manufacturing

  • Start by setting the oven to 180 degrees.
  • Put the dates in a bowl with a small amount of hot water for about 15 minutes.
  • After 15 minutes, mix the dates and a couple of tablespoons of water until smooth.
  • Add oats, flour, yeast, olive or coconut oil, apple and date mixture to a bowl. It is important to mix the mixture well each time you add a new ingredient.
  • Dip your hands and make small balls of dough. Place them on a baking sheet lined with parchment paper and leave about 2.5 cm of space between the biscuits.
  • Finally, place the almond chips on top of the biscuits and bake in the oven for about 6-7 minutes or until they are golden brown in color.
  • Let them cool until they become more crispy and ready to eat.

2. Banana-chocolate-oatmeal cookies

Only three ingredients are needed for this version of sugar-free oatmeal. Oatmeal cookies are therefore made easily and quickly and the preparation of this recipe is well suited for baking with children.

Ingredients

  • 3 ripe bananas
  • 100 g of oatmeal
  • Dark chocolate (70% cocoa)

You can also add dried fruits, seeds and nuts keeping in mind that if you do, you will also need to add more bananas so that the dough does not become too dry.

Manufacturing

  • Start by setting the oven to 180 degrees.
  • Place the baking paper on a baking sheet.
  • Puree the bananas into a puree in a bowl using a fork. Then add the oats and mix well.
  • Chop the chocolate and add it to the bowl.
  • Dip your hands and make small balls of dough. Place them on a baking sheet lined with parchment paper. You can take the dough with a spoon or mold if you want them to be the same size.
  • Bake in the oven for 15 minutes or until you notice the biscuits turn golden brown.
  • Remove from oven and allow to cool.

You can offer these biscuits with yogurt, cream cheese, smoothies, and fruit for either a healthy breakfast or a light and nutritious snack.
