1. Traditional vegetable soup

We couldn’t leave out the selection of this classic vegetable soup that grandmothers always recommended for warming body and mind in the winter. In reality,  any vegetables found at home can be used to make this soup. However, we suggest the following:

Ingredients

  • 1 garlic
  • 2 carrots
  • 1 large onion
  • 1/2 red pepper
  • 1/2 green pepper
  • 2 celery
  • 1 broccoli inflorescence
  • parsley, laurel, paprika powder, salt and pepper for seasoning (according to your taste)
  • water
  • oil

Manufacturing

  1. Wash, peel and chop all vegetables.
  2. Pour the oil into a saucepan, sauté the vegetables and add a little salt. Stir with a wooden spoon to prevent them from sticking together.
  3. Remove from the heat and add the pepper powder, stirring well, so that all the vegetables absorb the flavor. The pan should be removed from the stove to prevent the pepper seasoning from burning and becoming bitter.
  4. Season to your taste with other spices and stir again.
  5. Cover the vegetables with water  and simmer until soft. Test the taste of the soup and add spices if necessary.

Note:  If the broth is too dilute and you want it thicker, mix the vegetables (without water) in a blender and add them to the soup.

2. Vegetable soups for the whole family: Indian sambar

Indian sambar is made by mixing vegetables and classic Indian spices.

Sambar is a typical Indian dish that contains all kinds of vegetables. Below we share our own suggestion, but you can always add the vegetables you want to it or modify the recipe according to what you find in your home. It will definitely be tasty anyway!

Ingredients

  • 1 onion sliced
  • 3 slices of pumpkin
  • 1 medium tomato, chopped
  • 2 carrots
  • 12 green Papua
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin
  • 2 red chilies
  • 2 tablespoons oil
  • 1 branch of curry
  • 1/2 teaspoon mustard seeds
  • 1 tablespoon tamarind paste
  • 15 g coriander
  • 1/8 teaspoon turmeric
  • salt (according to your taste)

Manufacturing

  1. Wash and chop the vegetables (peel them first if necessary). Set aside.
  2. Fry the chili in a pan. When they are toasted, add the coriander and half a teaspoon of cumin. Wok for a minute and remove from the heat. Set aside.
  3. Pour 12.5 dl of water into the pot and heat. Add the chopped vegetables and let them cook until soft. You will find that a rich broth is formed.
  4. When the broth is hot, remove the bucket and moisten it with tamarind.
  5. Then add the turmeric, chili mixture and finally the tamarind.
  6. Fry in a pan the mustard seeds in which you put half a teaspoon of cumin. Then add the curry leaves, and when they are crispy, take off the stove and put in the soup.
  7. Taste and add salt if necessary.

3. Chickpea vegetable soup

Legumes can also be added to vegetable soups
Don’t limit soup preparation to just vegetables. You can include any legumes.

One of the most nutritious vegetable soups is the option we shared below, which also includes chickpeas. You can use the pulses and vegetables you like or find at home in the soup.

Ingredients

  • 200 g chickpeas, already soaked or cooked
  • 2 carrots
  • 1 leek
  • 1 medium zucchini
  • extra virgin olive oil
  • cumin, salt and pepper (to taste)

Manufacturing

  1. If the chickpeas are not ripe, cook them first before adding the vegetables.
  2. Wash, peel and chop the vegetables.
  3. Put a tablespoon of olive oil in a saucepan, add the chopped vegetables and wok them.
  4. When they brown,  cover them with enough water and add the chickpeas.
  5. Stir in the cumin, salt and pepper, and let simmer slowly without the lid for about twenty minutes or until the vegetables are soft.

4. Noodle vegetable soup

Ingredients

  • 150 g noodles
  • 2 tomatoes
  • 1 spring onion
  • 1 large or 2 medium potatoes
  • 2 carrots
  • 1 liter of water
  • salt and pepper (according to your taste)
  • optional: 1 tablespoon coriander

Manufacturing

  • Wash, peel and chop all vegetables.
  • Put a liter of water to a boil and add the carrots and spring onions. Let simmer slowly for ten minutes.
  • Put in the potatoes and noodles.
  • Fry the tomatoes in a pan. When they are cooked, add them to the soup.
  • Add coriander and season to taste.
  • When the noodles and vegetables are cooked, serve the soup.
